I ran across this recipe on Pinterest and can’t wait to try it. The combinations for this summery crunchy cake recipe are endless. This recipe can easily be manipulated to fit pretty much any one’s taste.

There are three different types of Rice Krispies, plain, chocolate and fruit flavored. You can also substitute chocolate chips for white chocolate chips. Just think about the hundreds of different kinds of ice cream or even frozen yogurt you can use in this recipe.

I can’t wait to try this recipe and see what tasty combinations I come up with.

Rice Krispies Ice Cream Cake

1/2 gallons ice cream

1 1/2 cups white chocolate chips

1 1/2 tablespoons butter

4 cups Rice Krispies

Put the half gallon of ice cream in the fridge until softened. Dump the white chocolate chips and butter into a large microwavable bowl and microwave until melted. Stir so butter and chips are mixed together. Now pour the Rice Krispies on top of the melted chips and stir until the cereal is completely coated. Pour the coated cereal onto a cookie sheet or parchment paper and spread it out so it can dry.

Break the coated Rice Krispies into little pieces and place into a spring form cake pan. Pour the softened ice cream over the cereal. Place the remaining coated cereal pieces on top of the melted ice cream and then press the cereal pieces into the pan so the Rice Krispies are packed nice and snug into the pan. Place the pan in the freezer for at least four hours.

When ready to serve, remove the spring form sides of the pan.
