I know it may seem a little early for a St. Patty’s Day recipe, but it is just around the corner. It’s one of those holidays that I always wish I enjoyed a little more than I do. Last year was the first year that I’ve made corned beef and cabbage, ever. I plan on doing it again because I loved it and it was way easier than I’d anticipated to make.

What other fun and delicious things can be made in the name of St. Patty’s Day? Pretty much any food that is green or that you can turn green can be considered St. Patty’s day food this time of year. One of my green foods is pistachio pudding. This is a little twist on it that my kids love.

St. Patrick’s Day Fluff

1 (8 ounce) tub cool whip

1 (20 ounce) can pineapple tidbits

1 package pistachio pudding mix

1/2 cup mini marshmallows

1/2 cup walnuts, chopped

Green sprinkles

Dump the tub of cool whip and pineapple tidbits (with juice) into a large bowl. Toss the pistachio pudding mix, marshmallows and chopped walnuts on top of the cool whip. Gently mix all the ingredients together. Garnish the top of the fluff with green sprinkles and serve.
