Everyone loves turkey sandwiches the day after Thanksgiving, but I get tired of the same old turkey sandwich every year. So, this year I’ve found a couple new sandwich ideas that take the old blah turkey sandwich and give it a little twist. I can’t wait to try these after this Turkey Day.

    Turkey, avocado and bacon sandwich

    Start by buttering one side of a piece of bread. Place cheese, turkey, sliced avocado and crispy bacon on unbuttered side of one piece of the bread. Add lettuce and tomatoes if desired, then sprinkle with salt and pepper. Heat a skillet over medium-low heat. Put the buttered slice of bread in the skillet buttered side down. Place another piece of bread on top of the fixings and butter the top side of the bread. Toast for one minute, and then flip the sandwich over.

    Sweet and spicy turkey pita

    Start by toasting 1 teaspoon of curry powder in a skillet for about 20 seconds, and then let it cool. Mix the curry with 2 tablespoons cranberry sauce and 1/2 cup of plain yogurt. Chop 2 cups of leftover turkey, 1/8 cup of onion and 1/4 cup celery, and dump all of these ingredients into a bowl. Add yogurt/cranberry mixture to the turkey mixture. Stir until combined and season with salt and pepper. Line a pita with lettuce if desired, and then stuff the pita with mix.
