I love peppermint. Christmas time is great for baking with peppermint. My friend makes a peppermint fudge that is to die for, and she only makes it at Christmas, of course. I like to eat as many goodies made with peppermint as I can this time of year, because it’s very hard to find the rest of the year.

This minty chocolate chip cookie recipe is the perfect blend of mint and chocolate, making it a great cookie to add to your holiday baking list. I will be making these cookies along with a few other of my holiday cookie favorites, to give to family and friends this Christmas season.

Wintry Minty Chocolate Chip Cookies

1 cup butter flavored Crisco

1 1/2 cups sugar

2 eggs

1 1/2 teaspoons peppermint extract

Green food coloring (as many drops as you need to get the green you desire)

3 cups flour

2 teaspoons baking powder

1 teaspoon baking soda

2 teaspoon cream of tartar

1/4 teaspoon salt

1 bag chocolate chips

Toss Crisco, sugar, eggs, peppermint and food coloring into a mix and beat until creamy on medium-high speed, then turn off.

In a separate bowl, mix together flour, baking powder, baking soda, cream of tartar and salt until combined.

Turn the mixer on low and slowly add the flour mixture to the Crisco mixture. Mix on low just until combined. Add chocolate chips and stir just a few times, so as not to break the chips.

Bake at 375 degrees for 10 to 12 minutes.
