I love chocolate pudding. I have at least five boxes of instant pudding mix in my pantry at all times. My favorite is pistachio but chocolate is a very close second. I have to say that I’m not really certain how healthy or unhealthy instant pudding is for me. I know it takes a lot of milk to make, so I’m getting quite a bit of calcium in my diet, but other than that, I’m not really sure.

When I ran across this super healthy chocolate pudding recipe that calls for an avocado, my curiosity was piqued. You see, I also love avocados. However, I had never thought of mixing chocolate and avocados before, but I have to admit that after trying this recipe, I was pleasantly surprised at how great it tasted. You get the thickness of the avocado without the avocado taste. All you taste is just sweet delicious chocolate pudding.

Healthy Chocolate Pudding with Avocado

1 avocado, peeled and pitted

1/2 cup coconut milk

1/4 cup peanut butter

4 tablespoons honey

3 tablespoons unsweetened cocoa powder

1 teaspoon vanilla

1/4 teaspoon sea salt

Coconut flakes, chocolate chips or chopped nuts

Throw the avocado, coconut milk, peanut butter, honey, cocoa powder, vanilla and salt into a blender or a food processor (whichever you have). Blend until nice and smooth, being sure the scrape the sides every now and then to make sure everything is being blended equally. Scoop into serving dishes and sprinkle with your favorite topping. Serve right away.
