I understand that you are probably sick and tired of turkey. Lots of families make turkey sandwiches or days and days after the holiday. Some families even resort to eating turkey noodle soup over and over until the bird is finally gone. But, this recipe is so good, that I look forward to it almost as much as the big holiday meal. Thats right, I prefer this over all the mashed potatoes, gravy, cranberries,, green bean casserole and even the turkey itself. Guy Fieri has a recipe that will knock your socks off. - For the Roasted Tomatillos:
- 1 1/2 pounds tomatillos, husked and cut in quarters
- 3 cloves garlic
- 2 jalapeños, stemmed and seeded
- 1 small sweet onion, rough chopped
- Olive oil
- Kosher salt and freshly ground black pepper
- 1/2 cup low-sodium chicken stock
- 1/2 bunch fresh cilantro
- Juice of 2 limes
- For the Turkey Enchiladas:
- 3 tablespoons olive oil
- 1 pound lean ground turkey
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon paprika
- 1/4 teaspoon dried oregano
- 1/2 small yellow onion, finely diced
- Kosher salt and freshly ground black pepper
- Eight 8-inch flour tortillas
- 1 cup shredded Jack cheese
- 1/2 cup crumbled queso fresco
- Chopped fresh cilantro, for garnish
- 2 cups sour cream, for serving
