Next weekend we are gearing up for the "BIG DANCE," and the 2nd biggest food holiday in America. Not only food, but an abundance of beer that deserve a good food pairing. Whether you make it at the tailgate or at home, you want something that will impress your buddies. And usually something that is unhealthy. Something that involves lots of cheese. Something that undoubtedly incorporates bacon. And, most importantly, something that will keep your guests looking for more.

We are lucky that we live in a state that has an abundance of game animals. People in other parts of the country consider venison a delicacy. Just look at the price of an elk steak next time you are at a fancy New York City restaurant. But, for us, it is part of our diet and is usually brought out for special occasions. Like a BIG game day meal.
