Rocky Mountain Chocolate Cake Recipe
If you got a good look in my pantry you would find anywhere from 15 to 20 cake mixes filling the shelves at one time. I love to bake cakes. All types of cakes. Any recipe that calls for a cake mix, I love to try.
When I ran across this recipe, I just had to try it. My boys and my husband loved it. It’s a delicious mixture of chocolate, coconut, walnuts and cream cheese. This cake is great anytime dessert.
Rocky Mountain Chocolate Cake
1 cup coconut flakes
1 cup chocolate chips
1/2 cup chopped walnuts, chopped
1 box chocolate cake mix
1/3 cup oil
3 eggs
1 2/3 cup water
1 package cream cheese
1/3 cup butter
3 1/2 cups powdered sugar
Evenly coat the bottom of a greased 9x13 inch pan with the coconut flakes, chocolate chips and walnut chunks. In a separate bowl, mix together the cake mix, oil, eggs and water until combined. Sprinkle the cake mix mixture over the coconut, chocolate chips and walnuts.
In a saucepan, over medium heat, melt the butter and cream cheese. Then add the powdered sugar and mix until creamy. Pour this creamy mixture over the cake layer. Take a knife and swirl the layers together to make decorative designs. Bake for 40-45 minutes at 350 degrees.
