Do you know what today is? Don’t feel bad if you don’t, it’s not a common holiday. I’ll give you a hint, it has something to do with classic Christmas cookies. Yes, today Dec. 9 is Search High and Low for Your Gingerbread Recipe Day. I bet, just like me, you didn’t know this day existed. Well, it does. If you’re like me, then you don’t keep your gingerbread recipe on hand. I’m lucky to make a batch of these babies once a year. So, to help save you some time, I’ve found a delicious gingerbread recipe for you. I hope this gets you in the holiday spirit.

 Soft Gingerbread Cookies

3/4 cup molasses

1/3 cup packed brown sugar

1/3 cup water

1/8 cup soft butter

3 & 1/4 cup flour

1 teaspoon baking soda

1/2 teaspoon ground allspice

1 teaspoon ground ginger

1/2 teaspoon ground cloves

1/2 teaspoon ground cinnamon

Mix the molasses, brown sugar, water and butter until smooth in a medium bowl. Combine all the rest of the ingredients, then stir the dry mix into the wet mix until the dry mix is absorbed. Cover the dough and let it chill for three hours in the fridge.

Preheat your oven to 350 degrees. Lightly flour a flat surface, and then roll dough out 1/4 inch thick. Cut out your gingerbread men, and then place them on an ungreased cookie sheet about an inch apart. Bake cookies for 8-10 minutes.  Let cool and then decorate as desired.
